Red, White, and Blue Salad


  • 2 cups baby spinach leaves
  • 1 cup halved strawberries
  • 1 cup diced jicama
  • 1 cup fresh blueberries
  • 1/4 cup crumbled feta cheese
  • 1/4 cup chopped walnuts
  • 2 tablespoons balsamic vinegar
  • 1 tablespoon extra virgin olive oil
  • 1 teaspoon honey
  • Salt and pepper to taste


  1. Wash spinach (if necessary) and place in a large salad bowl.
  2. Add diced jicama, fresh blueberries and strawberries to the spinach.
  3. Sprinkle the crumbled feta cheese and chopped walnuts over the salad for added flavor and texture.
  4. In a small bowl, whisk together the balsamic vinegar, extra virgin olive oil, honey, salt, and pepper to create the dressing.
  5. Drizzle the dressing over the salad just before serving and toss gently to coat all the ingredients evenly.
  6. Serve immediately as a refreshing and colorful side dish or add a lean protein, such as chicken, shrimp or tofu, to make it a satisfying main course.
