Ingredients:
- 2 slices of whole grain bread, toasted
- 1 ripe avocado
- 2 eggs
- Tajín seasoning (or substitute with chili powder and a pinch of salt)
- Optional: Fresh cilantro or parsley for garnish
- Optional: Can substitute scrambled, hardboiled, etc. for poached eggs.
Instructions:
- Cut the avocado in half, remove the pit, and scoop the flesh into a bowl. Mash the avocado with a fork until smooth.
- Fill a saucepan with water and bring it to a simmer (not boiling). Crack each egg into a small bowl or ramekin. Create a gentle whirlpool in the simmering water with a spoon and carefully slide the eggs, one by one, into the water.
- Poach the eggs for about 3-4 minutes, until the whites are set but the yolks are still runny. Remove with a slotted spoon and drain on a paper towel.
- While your eggs cook, begin toasting bread. When it is toasted to your desire, spread a generous layer of mashed avocado onto each slice of toasted whole grain bread.
- Carefully place a poached egg on top of each slice. Sprinkle Tajín seasoning over the eggs and avocado.
- Serve immediately while the eggs are still warm, and the toast is crispy.
