Southwestern Breakfast Casserole

Ingredients:

  • 6 slices whole-grain bread, cut into cubes
  • 1 10-ounce package frozen chopped spinach (cooked and drained)
  • 1 red bell pepper chopped
  • 1½ cups (6 ounces) low-fat sharp cheddar cheese
  • 3 cups non-fat milk
  • 5 large eggs
  • 1 teaspoon garlic powder
  • 1 teaspoon cumin
  • 1 teaspoon of salt free seasoning to taste

Instructions

  1. Preheat oven to 350ºF. Layer the bread in a 9 x 13-inch baking dish. Sprinkle evenly with the spinach, red peppers and cheese.
  2. In a large bowl, combine the 5 large eggs, non-fat milk, garlic powder, cumin, and salt free seasoning.  Pour over the baking dish.
  3. Cover and refrigerate for at least 4 hours or overnight.
  4. Bake, uncovered, for 45 minutes and let stand for 10 minutes before serving.
