Lemon Garlic Pasta

Ingredients:

  • 2 oz whole wheat pasta (such as spaghetti or penne)
  • 1 tbsp olive oil
  • 2 cloves garlic, minced
  • 1 lemon, zested and juiced
  • 1/4 cup chopped fresh parsley (optional for garnish)
  • Freshly ground black pepper or Italian seasoning, to taste

Instructions:

  1. Bring a pot of water to a boil. Cook the whole wheat pasta according to package instructions until al dente. Drain and set aside.
  2. In a small pan, heat the olive oil over medium heat. Add the minced garlic and sauté until fragrant, about 1 minute.
  3. Add the cooked pasta to the pan with the garlic and olive oil. Toss to coat the pasta evenly. Stir in the lemon zest and lemon juice. Mix well.
  4. Add freshly ground black pepper or Italian seasoning to taste.
