Arepas with Veggies

Ingredients:

  • 1 cup pre-cooked cornmeal
  • 1 cup water
  • 1 cup diced bell peppers
  • 1/2 cup diced onions
  • 1 tsp olive oil

Instructions:

  1. In a medium bowl, mix cornmeal with water to form a dough.
  2. Divide the dough into 4, equal patties and cook in a pan with olive oil for 3-4 minutes on each side or until brown.
  3. Top with bell peppers and onions. You can choose to sauté these in the pan you used to create the Arepas or eat raw. Serve warm and enjoy!
