Sweet Potato and Black Bean Tacos

Ingredients:

  • 2 medium sweet potatoes, peeled and diced
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 tablespoon olive oil
  • 1 teaspoon ground cumin
  • 1/2 teaspoon smoked paprika
  • 1/4 teaspoon black pepper
  • 6 small corn tortillas
  • 1/2 cup chopped fresh cilantro
  • 1 lime, cut into wedges

Instructions:

  1. Preheat oven to 400°F. In a medium bowl, toss sweet potato cubes with olive oil, cumin, paprika, and black pepper.
  2. Spread on a baking sheet and roast for 25-30 minutes, until tender.
  3. While veggies are roasting, warm the corn tortillas in a skillet or microwave.
  4. Fill each tortilla with roasted sweet potatoes, black beans, and a sprinkle of cilantro. Serve while warm and enjoy!
