Ingredients:

  • 2 cups fresh spinach
  • 1/2 cup chickpeas (canned and rinsed)
  • 1/2 cup cherry tomatoes (halved)
  • 1/4 avocado (sliced)
  • 1 tbsp balsamic vinegar2

Instructions:

  1. Combine spinach, chickpeas, cherry tomatoes, and avocado in a bowl
  2. Drizzle with balsamic vinegar and toss gently.
