Mediterranean Farro

Ingredients:

  • 1 cup cooked farro
  • 1/2 cup diced cucumber
  • 1/2 cup cherry tomatoes, halved
  • 1/4 cup diced red onion
  • 2 tablespoons lemon juice
  • 1 tablespoon chopped fresh dill
  • Salt free seasoning to taste

Instructions:

  1. Cook 1 cup ferro to the package instructions. Allow ferro to cool slightly and then combine cooked Ferro, cucumber, tomatoes, and onion in a bowl.
  2. Mix lemon juice, dill, and black pepper in a small bowl and pour on top of ferro salad. Serve and enjoy!
