Veggie Mac & Cheese

Ingredients:

• 2 cups whole-wheat elbow macaroni
• 1 cup broccoli florets (or mixed veggies like peas and carrots)
• 1 tbsp olive oil
• 1 tbsp all-purpose flour
• 1 cup low-fat milk
• 1 cup shredded, low-fat cheddar cheese

Instructions:

  1. Bring a large pot of water to a boil. Cook macaroni according to package instructions. Add broccoli during the last 2–3 minutes of cooking. Drain and set aside.
  2. In the same pot, heat olive oil over medium heat. Stir in flour and cook for 1 minute to form a roux.
  3. Slowly whisk in milk and cook, stirring constantly, until slightly thickened.
  4. Reduce heat to low and stir in shredded cheese until melted and smooth. Add optional spices if using.
  5. Add cooked macaroni and vegetables to the cheese sauce and stir until evenly coated. Serve and enjoy!
