Mediterranean Baked Cod with Vegetables

Ingredients:

  • 1 lb cod fillets
  • 1 cup cherry tomatoes
  • 1 cup sliced zucchini
  • 1 tablespoon olive oil
  • 1 tablespoon lemon juice
  • 1 teaspoon dried oregano
  • Black pepper to taste

Instructions:

  1. Preheat oven to 375°F. On a medium baking sheet, arrange cod, tomatoes, and sliced zucchini on a baking sheet.
  2. Drizzle with olive oil, lemon juice, oregano, and black pepper. Bake for 20 - 25 minutes until fish is flaky. Remove from oven and enjoy!
