Spinach and Mushroom Frittata

Ingredients:

  • 4 egg whites
  • 1/2 cup fresh spinach
  • 1/4 cup sliced mushrooms
  • 1/4 cup diced onions

Instructions:

  1. Preheat oven to 350°F. While oven pre-heats, sauté mushrooms and onions until tender. Add spinach to the sautéed mushrooms and onion; cook until wilted
  2. In a small baking dish, pour egg whites over vegetables and bake for 15 minutes. Remove from oven and let sit for 5 minutes before serving.
