Oat-Banana Pancake Bites

Ingredients:

  • 1 cup rolled oats
  • 1 ripe banana
  • 1 egg
  • 1/2 teaspoon cinnamon
  • Optional: splash of milk if batter is too thick

Instructions:

  1. Add the rolled oats, banana, egg and cinnamon to a blender or food processor.
  2. Blend until the mixture forms a thick but spoonable batter. Add a small splash of milk if batter is too thick.
  3. Preheat a griddle or skillet over medium-low heat and lightly grease.
  4. Scoop small spoonfuls of batter onto the griddle, forming mini, bitesized, pancakes, about 2–3 inches wide.
  5. Cook until golden and set.
