Ingredients:
• 1 serving plain ramen or wheat noodles
• 3 cups low-sodium vegetable broth
• 1 cup bok choy, chopped
• 1/2 cup mushrooms, sliced (shiitake or button)
• 1 large egg
Instructions:
- Bring a small pot of water to a boil. Gently lower the egg in and cook for 7-8 minutes for a boiled center. Transfer to cold water, peel, and set aside.
- In a separate pot, bring the vegetable broth to a gentle simmer.
- Add mushrooms to the broth and cook for 3–4 minutes until tender.
- Add bok choy and simmer for another 1–2 minutes until just wilted.
- Cook the noodles according to package instructions using plain water, then drain.
- Add cooked noodles to a bowl and ladle the hot broth and vegetables over them.
- Slice the boiled egg in half and place on top and enjoy!
