Veggie Ramen

Ingredients:

• 1 serving plain ramen or wheat noodles
• 3 cups low-sodium vegetable broth
• 1 cup bok choy, chopped
• 1/2 cup mushrooms, sliced (shiitake or button)
• 1 large egg

Instructions:

  1. Bring a small pot of water to a boil. Gently lower the egg in and cook for 7-8 minutes for a boiled center. Transfer to cold water, peel, and set aside.
  2. In a separate pot, bring the vegetable broth to a gentle simmer.
  3. Add mushrooms to the broth and cook for 3–4 minutes until tender.
  4. Add bok choy and simmer for another 1–2 minutes until just wilted.
  5. Cook the noodles according to package instructions using plain water, then drain.
  6. Add cooked noodles to a bowl and ladle the hot broth and vegetables over them.
  7. Slice the boiled egg in half and place on top and enjoy!
