Tofu Buddha Bowl

Ingredients:

• 1 cup firm tofu, cubed
• 1 cup cooked brown rice
• 1 cup mixed vegetables (broccoli, carrots, bell peppers, or zucchini), steamed
• 1 tbsp olive oil

Light Sesame Dressing:

• 1 tbsp sesame oil
• 1 tbsp low-sodium soy sauce
• 1 tsp rice vinegar or lemon juice
• 1 tsp honey or maple syrup

Instructions:

  1. Prepare the brown rice according to package instructions and keep warm.
  2. Steam the mixed vegetables until tender-crisp, about 5–7 minutes.
  3. Heat a nonstick skillet over medium heat with olive oil. Add tofu and cook until lightly golden on all sides.
  4. In a small bowl, whisk together sesame oil, soy sauce, rice vinegar, and honey until well combined.
  5. Assemble the bowl: add brown rice as the base, top with cooked tofu and steamed vegetables.
  6. Drizzle lightly with sesame dressing.
