Quinoa & Black Bean Salad

Ingredients:

  • 1 cup cooked quinoa (follow directions on bag).
  • 1/2 cup black beans (rinsed)
  • 1/2 cup chopped bell peppers
  • 1/2 cup cherry tomatoes (halved)
  • 1 tbsp lime juice
  • 1 tbsp chopped fresh cilantro

Instructions:

  1. Cook quinoa following the directions on the packaging.
  2. Combine cooked quinoa, black beans, bell peppers, and cherry tomatoes in a bowl.
  3. Drizzle with lime juice and toss to combine. Serve immediately or refrigerate!
