Egg & Black Bean Tacos

Ingredients:

  • 4 large eggs
  • 1 cup canned, low sodium, black beans, drained and rinsed
  • 4 small corn tortillas
  • 1/4 cup shredded, low-fat cheese (cheddar, Monterey Jack, or Mexican blend)
  • 1/4 cup salsa
  • Optional: chopped cilantro, avocado slices, or lime

Instructions:

  1. In a bowl, whisk the eggs.
  2. Heat a nonstick skillet over medium heat and scramble the eggs until soft and cooked through.
  3. Warm the corn tortillas until pliable.
  4. Warm the canned black beans in a separate small pan or microwave.
  5. Assemble the tacos: layer scrambled eggs, warm black beans, a sprinkle of cheese, and a spoonful of salsa onto each tortilla.
  6. Add any optional toppings like cilantro, avocado, or a squeeze of lime.
